Our farm is located in a natural upweller, surrounded by the granite outcroppings that make up the Thimble Islands of Stony Creek. Our oysters are farmed in cages on the hard bottom of the ocean floor, allowing them to tumble and grow without disruption from mud. The surrounding Thimble Islands allow for a unique natural aquaculture setting, in which the steady currents that circulate our oysters provide a variety of benefits. The consistent and strong circulation of clean water provides a steady flow of oceanic nutrients, (food for the oysters), to our farm. These strong currents also create deep cold water channels that cascade fresh nutrients directly up onto our oyster flats. The island currents constantly rock the oysters in place, giving them a robust shape and shell cup. Along with our farm’s natural current, we routinely tumble our oysters into shape on our boats, cleaning them and categorizing them by size. This allows the oysters to grow in a setting where they’re not in competition with each other for resources. While Stony Creek Oysters are farm raised, our aquaculture setting allows our oysters to grow in an environment that is natural, organic, and rich with the life of the sea.
